Changing bits halfway

Hi all.
New to this world, and trying to get my head around it step by step.
Ive seen easel has an option to add a more detailed bit for more precise work after the rough parts have been removed by first bit.
Now, i dont know how to select what parts to be done with first bit and which to be done with second bit, or does easel do it all by itself? If so, does it stop halfway and tell me to change the bit?
