Flatting Bit

I need to flatten some mesquite wood with some epoxy parts. I was wonder if any of you have a flatten bit and what type?
What setting do you use on the X carve?

The project is Cheese Board with some engrave on the finish project. 18.5 inches in length and 9.5 inches in width

I was trying to put the link from my easel into this question however I need more coffee to figure that out.

I usually use a 1/2" and sometimes a 3/4" diameter straight bit, but a bowl bit would leave a better finish I think. That said, I only have flattened wood, not epoxy.
