We are new to using X-Carve. How does everyone hold their wood down so that once the item is cut out it isn’t sitting loose? What we have cut so far has become loose when cutting and then gets hit by the bit.

You can setup tabs which will hold the piece in place then using a flush hand saw just cut out the tabs, it will take a little extra finishing work though. Quick demo Easel - Untitled
You can also use the glue and tape method. pawpaws workshop has videos on how to use the glue and tape method.
