Im thinking to swap out the uno with a ATmega 2560 ,
will the extra memory be of benefit ? will GRBL use the extra memory to any benefit ?
can any tech folk here chip in?
cheers

The ATmega 2560 is not officially supported by grbl. There is some conditional code that supports it, but it is minimal and only changes a few of the pin assignments, and one register which is 16 bits on the 2560 and 8 bits on the UNO.
Personal opinion, not worth the effort.
