If I accidentally delete something in easel and then close the window, it saves the project and when I reopen it, I can’t undo.
Is there a way to roll a project back in time?
My error of course, but I still have to ask.

You could export the project each time prior to making changes that you may want to undo.

You could occasionally duplicate the workpiece and use the new one for additional changes, effectively using the workpieces as a timeline.
Other than a manual method like this, no easel doesn’t have a change timeline the way fusion360 does
