Is there a way to see the X, Y and Z positions at all times with Easel? Also can you origin an axis?

Not while using Easel as the sender. You can design in Easel, then export the gcode and send with UGS or OpenBuilds which has the datum displayed at all times. OpenBuilds Control also has built in G28 function buttons to allow you to assign certain locations as jig coordinates, this is quite useful for Corner type Fences.
