It would be great to have some Western, Old West, Fonts to use.

Learn inkscape and do all your font manipulation in there. Inkscape can use any font installed on your system and will give you much better control than easel can. Once you have the design in inkscape, convert all objects to path, save as svg and import the svg into easel. The way easel deals with fonts is horrible.
