trying to cut this project but guess I don’t understand pocket cut setup in easel?

What is your question? your cut looks fine. but your design is larger than a 1000mm x 1000mm machine can cut. it is 1180mm tall and the machine can only cut at max around 790mm. unless you have a modified X-Carve with a larger work area you would need to make this cut by tiling. which would require using guides such as dowel pins to align your work to ensure an accurate cut. not sure if this answers what you are wanting but it is the biggest hurdle I see in your project.
