How can I set path order to run outside path, on path, adjust depth, run outside path, inside path, adjust depth ect. until I cut all the way thru?

Within Easel this is not something that the user can control.
However you could perform multiple carves to achieve this result. One carve for each depth stepdown.
Other software makes this a fairly simple setup though.
