How do I go about smoothing this curve. I created it using the pen in Easel.

Select a path, click “Edit Points”, select each point and change it to “Curved”. You can use the point handles to adjust.

I should have also asked "Is this the proper way to create a Bezier curve? For instance, I would like to create a slight wave under a word or sentence.

Use less points. A line with three points, middle being a “curved” point will give you a nice wave.
