Can anyone explain to me why the bottom cut starts where it does? Need it to enter the piece the same as the top cut. Both shapes are the same, I copied the the top and flipped it vertical.

Easel has no rime or reason as to why it choose its cut paths and start points, unfortunately it is what it is.
