When using v bits with V Carve Pro is the cut depth automatically set? The cut depth will go deeper as the bit angle decreases?
Yes, up to your maximum depth (flat depth).
Any CAM program that can handle V-carving will do the same. That’s the point.
Unintentional pun?? 
The V-bit main cut parameter is A) width of path followed by B) max depth. If the path is wider than the geometry of the bit it will not go further down than max depth which is user-defined.
