So we can engrave with another software? Or do we have to use easel every time?

Any program that can export gcode in an appropriate format for the Xcontroller to read is fine.
There are many.

Easel is just Inventables “one-in-all package”, design (CAD), make tool paths (CAM) and machine it (CNC)

I’ve never used Easel, because I was already using V-Carve Pro when I built my x-carve.
