When doing a full depth cut out, do I set my model Z to the depth of the workpiece
You select your material size and then decide the depth you want to cut to. You can use the slider or enter a number. When I cut through a material, I usually use double sided duct tape to hold the piece in place rather than choosing tabs, which is another option. If cutting below the material I use a disposable waste material to save the table surface.
