Some of these projects take several hours to do. Is it safe for the Dewalt 611 to be running this long? I know other spindles have coolers in them…

It depends on the load.
Most use speed setting #1 - 3
Slower RPM = less cooling but most seem to handle it just fine.
Motor brushes do wear out eventually, 150hrs seem to be the norm - stock up a replacement pair so you have it on hand when the original crap out.
