I would like to use nice 3/4 inch rift cut white oak plywood for the doors and drawer fronts, but also the exposed sides of the cabinets, while using less expensive 1/2 inch plywood for all the internals. Is there any way to select material for specific sides of cabinets?

Not per-cabinet, but you could generate the CNC profiles into Easel, and make a new workpiece just for the oak portions. Then just move over the sides you want cut from oak.
If you are cutting the sides from 3/4" but everything else from 1/2", you might have to manually update the depth of the holes and/or rabbets.
