If you are looking to carve in Cyrillic as I was for a project done with Ukrainian Cyrillic for a fundraiser for the Ukrainian Army, I have compiled a list of all the Easel Fonts that will allow you to carve in Cyrillic. I will be trying other non-anglicized language characters in the following days and updating this post with them as they are done.
Fonts with an asterisk beside them are able to carve some but not all characters.
