how to define a material type to work with graphite?
You can add custom materials to your toolbox using the toolbox button at the very top or click add at the top of the mateirals list.

When adding a customer material, it asks for Material Type, which is a drop box of three choices: wood, plastic and metal. Which one should be selected to work with graphite?

That dropdown only effects the visual of the material, so you can select whichever youd like it to appear as. If doesnt effect the toolpaths generated.
