I designed a sign in Fusion 360. Do I have to convert mesh to solid for x-carve? I never used CNC and just wandering if x-carve can handle it. Also, Can you recommend the bits I can use for this project, please?

You can generate cut files straight from STL, no conversion, see this video for reference:
