What size offset for a tight fit?

Hi - I make a lot of wooden pieces that are meant to fit snugly together, and what I normally do is just cut a positive and negative of the same exact shape and then sand whatever’s needed by hand to fit them tightly together.

I’m just wondering what size gap you would program your carves to eliminate the need for hand sanding without overshooting and ruining the fit? I was thinking .001" but maybe that’s too little?

with .003" i needed a mallet to drive them home.
