Z height on a two stage 3D carving

I am using Fuzion 360 to carve out the front of a castle and it is being done in two stages. I am doing an adaptive clearing and a parallel finishing pass. For my Parallel pass do I set my Z height to the original height that I started from or do I need to lower it to where the wood is at the X and Y zero point?

As long as the Z0 in Fusion matches the Z0 on your workpiece, it’ll work. If you’re working all under the same setup and you haven’t set any offsets for the top height, you would use the same Z0 for both operations.
